<p>Fridays need to be fun. When I was homeschooling, I always tried to schedule something a little bit out of the ordinary on Friday. After all, everybody is tired and looking forward to the weekend. Even though it is summer, I decided to go ahead and institute Fun Fridays for Homeschool Moms.</p>

<h2 style="text-align: left;">Blackberry Recipes</h2>

<p style="text-align: left;">Summer is the time for blackberries. I always go to a farm near my house and pick a bunch and freeze enough to last me all year.  How about a new recipe from my lady friend at the farm?</p>
<p style="text-align: left;">Blackberry Cobbler</p>
<p style="text-align: left;">Mix together 8 cups blackberries, 2 1/2 cups sugar, and 3 tablespoons flour and let set 20 minutes. Boil 10 minutes and add 1 1/2 teaspoons almond flavoring.  Put 1/2 berries in 9 x 9 dish and cover with pie crust. Bake at 475 degrees for 12 minutes. Put rest of berries on top and cover with lattice pie crust. Sprinkle with sugar and bake 12 minutes or until golden brown.</p>
<pre style="text-align: left;">Blackberries with Cream Sauce

1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/4 cups milk
4 eggs, beaten
1/2 cup sour cream, regular or lite
2 pints fresh berries</pre>
<p>In medium saucepan, combine sugar, cornstarch, and salt. Gradually stir in milk. Bring to boil over medium heat, stirring constantly. Boil and stir for one minute. Remove from heat. Add 1/2 cup of the hot mixture into the eggs, beating constantly. Return to saucepan (not on burner). Add sour cream and vanilla; beat with whisk until blended. Place saucepan in bowl of ice water for a few minutes to cool. Cover and chill thoroughly. Serve sauce over berries.</p>
