Yummy Low Calorie Cake

This recipe comes from my Weight Watchers Class. Now before you get all turned off and think it must be awful, give this cake a chance. For one thing it is really super easy. But it is also tasty! I have made two variations of it and my grown boys even like it. You can make it either a chocolate cake or a yellow or lemon cake. You can also invent your own after you get the hang of it. The thing that makes it lower calorie is losing the eggs and the oil. On Weight Watchers we count 1/12 of this dessert as 3 points. I get 19 points to use a day if that helps you figure how deadly the dessert really is, (not very!)

Ingredients:

1 Cake mix, chocolate or yellow.

1 12 oz. can of diet soda (you can use cola, Dr. Pepper or root beer with chocolate cake or Sprite, Mountain Dew etc. with the yellow cake.)

spray butter

Beat the cake mix with the soda. Spray a 9 x 14 pan with Pam or other pan coating spray. Pour the cake mix into the pan and bake at 350 degrees for 45 minutes. or until a toothpick inserted comes out clean.

Garnish with Fat Free cool whip

Variation: Take two one pound sacks of frozen fruit and dump into the 9 x 14 pan that has been sprayed with Pam. Sprinkle fruit with Splenda.

Dump cake mix on top of this

Pour one 12 oz can of diet pop on top of this.

Spray top with spray butter

Cover with foil and cook for 15 min. at 350. Take foil off and cook for another hour and a half or so. This cobbler is heavenly! I made it like a black forest cake on the Fourth of July with cherries on the bottom, a chocolate cake mix and a diet root beer. My kids were fighting over the last piece!

Homeschooling is a Good Idea

Has the thought been popping up every now and then? Do you have a little yearn to take control of your children’s education? I remember one of the things that the Lord spoke to me about before I started homeschooling. I was outside in my yard, looking at myroses while keeping an eye on my sons playing in their sandbox. I began to really look at a rose. I thought about how wonderful that rose was, and how much love God showed me by creating it. I became so inspired I began thinking about how I would teach my boys about this. Then I remembered my fifth grade year, when I was ruthlessly informed that God had nothing to do with the origin of people. The remembrance of this was so painful. I couldn’t bear the thought of government science teachers undermining the truth of God’s word. I didn’t know how yet, but I made a silent vow to myself. Somehow, some way, I would not let that happen to my boys.

Eventually I ran on to an obscure book in my church library about a lady who schooled her boys in hotels and airports while her family travelled the world. Something clicked, and that began my quest to find out more about homeschooling.

Is God nudging your spirit about your childrens’ education? Don’t worry about it. Start praying. You don’t have to understand all about how it works right now. Just decide to find out about it. He will do the rest.

I have been wanting you to meet my blogging friend Cristina for ever so long. Cristina blogs over at Homeschool Blogger. She is just one of the many flavors of homeschool moms out there. She is fun for many reasons, but two of them are she knows how to juggle and she writes the most adorable comics! I just had to show you one of her strips. I will be sharing one with you every Friday. Go to the homepage and check the comics category for more . Please send me any cute homeschooling comics that you run on to for my collection! Also, send me a bio and web address or picture of a homeschooling mom that you know who we should know too! Well, here’s your treat for today. I pray that you will have a wonderful weekend.

Whether you are a curious surfer or a serious homeschooling mom, or a homeschooling mom who carved out a few seconds for yourself somehow, Welcome! I am Robin Khoury, a former homeschooling mom who did it for fourteen years. My boys are grown now, one graduated from college last summer, and one is a junior. I actually lived through the experience of homeschooling k-12. Actually, I should say, “loved” through the experience, because I wouldn’t trade back one of those days now. (Even the ones when I was threatening to send certain people to military school and hiding in the bathroom and praying for strength to continue!) Now my heart is full of these memories, and my boys are doing well.

I would like to put together some things on this blog that would have helped me. The first one is a feeling that you are not alone. Help For Homeschool Moms can be your place you come for friendship and encouragement. (We will have a community section soon!) Also, you will be able to come here for encouragement and links to other things that you need, like curriculum, class and other information.

Welcome to Help For Homeschooling Moms. I want to make this your soft and cozy place to land on the web! Let’s get to know each other! Leave comments, let’s exchange links if you have a blog, website or product that homeschoolers would like to know about. This is gonna’ be fun!
